Potato Cheese Soup for a Crowd

Need to feed a small army of kids, family or your church group? Here’s a recipe from the Sisters of the Order of St. Benedict, courtesy of Sister Pat Ruether, CMHFH board member.

Yield: 3 gallons


  • 7 lbs potatoes, diced small, 1/4-inch size
  • 5 lbs carrots, diced small, 1/4-inch size
  • 2 C onions, diced 1/4-inch
  • 1 lb celery, diced 1/4-inch
  • 1 gal. water
  • Salt, to taste

Cheese Sauce

  • 1 lb margarine
  • Salt, to taste
  • 4 oz flour
  • 2.5 qt milk
  • White pepper, to taste
  • 1 lb American cheese


Dice vegetables. Cover with water, add salt, and cook until tender.

Make cheese sauce: Melt margarine, add flour and stir. Add milk, salt and pepper, stirring to make white sauce. Cut cheese into small chunks and add to white sauce. Stir until melted – do not burn.

Carefully and slowly add finished cheese sauce to cooked vegetables and water. Stir. Remove from heat to prevent burning. Heat to 165 degrees just before dishing up.
